Veganuary is a global pledge to go vegan for the whole of January. Started as a non-profit organisation in 2014, it’s purpose is to take climate action seriously by promoting a vegan lifestyle. Whether you’ve taken part before or are taking part for the first time this year, here are some excellent vintage cookbooks to inspire your vegetable cooking!
The wife of a sanatorium owner, Bertha Brupbacher-Bircher presents the idea that meat, including fish and poultry, is poor in vitamins and contribute to human tissue decay. The term veganism was coined in 1944 but the movement didn’t become mainstream until the 2010s. The recipes in this book, including soups, raw salads, vegetables, herbs, rice and more, aim to improve dietary nutrition and contribute to healthier living.
The Whole Earth Cookbookbrims with a variety of wholesome recipes. The recipes use natural, ‘whole’ ingredients such as vegetables, fruit and grains, all grown in rich organic soil. The book does contain a variety of free range, chemical-free meat recipes and lists dairy products, both can be replaced by modern alternatives. There are plenty of vegetable and grain centred recipes too, including a section on ‘Nonmeat Protein Dishes’, to inspire delicious and nutritional Veganuary cooking!
Scottish journalist and economist Elizabeth Craig began publishing cookery books soon after the First World War and continued to do so well into the 1980s. This book contains over 300 delicious salad recipes. Though she too includes many meat, egg, and dairy based recipes, there are also plenty of green, fruit, vegetable and grain-based salads to be enjoyed. She includes a section on dressings too for those who wish to add more flavour. Some of her recipes may seem out of date but these can be adapted with modern, vegan friendly ingredients.
Ambrose Heath was a hugely successful food and drink writer. He sought to change the way people thought about food, using seasonal produce as his main ingredients. This classic cookery book features recipes for every month of the year, celebrating fresh produce and the culinary influences of other cultures. Packed with over 400 recipes, both savoury and sweet, it is a delightful cookery guide. For those wishing to avoid meat and dairy, there are plenty of salads and vegetable based recipes to be enjoyed throughout Veganuary and beyond.
A brilliant cookbook which aims to teach the amateur chef how to make food taste better. The secret to flavour packed dishes? Herbs. This charming cookbook is dedicated to teaching readers all about herbs: including their history, instructions on how to grow them, and their uses. The author includes hundreds of deliciously herby recipes, from soup, salads and vegetables to meat and fish, the latter pairing may be ignored by the vegan chef! There are even recipes for herb vinegars, herb candies and herb drinks for the experimental cook!
For the creative cook, this book includes a selection of more unusual salad recipes. Blushing Pear Salad, Tomato Salad Ring made with a Jell-o mould, and Blackberry Salad to name a few. For the classic cook, there are recipes for classic salads too such as Cucumber Salad, Avocado Salad and the Giant Green Salad. Like most of the publications on this list, this book is also of its time and still includes meat and dairy recipes. However, you can simply ignore these or adapt them with delicious vegan alternatives. This book is ultimately a homage to the colour and flavour of vegetables.
It can be hard finding enough tasty recipes to keep hungry mouths happy during Veganuary, especially if you’re not used to a meat-free diet. With this selection of colourful, herby and inventive recipes however, you’ll be setting delicious dishes on the table throughout January and beyond. So choose a book, or maybe two and ready, set, cook!
