A 1962 edition of The Epicurean Book by Jean Conil! This is a book about food and wine designed for epicures as distinct from gastronomes. For whereas the gastronome is a traditionalist and a man of rules, the epicure is an experimentalist, an explorer, a dilettante, one who makes precedents rather than follows them. So in this new book by a world-famous chef, whose Haute Cuisine is regarded as a bible of the profession, we do not find the traditional great dishes and the elaborate recipes; instead he displays the curiosities among foods and drinks, new ways of cooking familiar meals, and masses of intriguing information about everyday items on the menu.
