Reader's note

This is not essentially a Recipe book, although a number of recipes are given, but a guide for those interested in Preserving. Suggestions are given for the best methods to be adopted under present conditions. The various ways of bottling fruit are discussed and special chapters are devoted to jam making, fruit jellies and syrups, storing and drying fruit and vegetables and the making of pickles, chutneys and sauces. The contents are based on the valuable experience gained at the Long Ashton Research Station Experimental Kitchen. The busy home owner who is already trying to fit in so much extra work, can, as a result of reading this book, have the joy of possessing a cupboard full of preserves which will more than repay the trouble of making them. This vintage Penguin would add a splash of green to any kitchen as well as provide you with all the knowledge on preserves that you could wish for!
