Reader's note

This is a working English cookery book, and not a history of English cooking. It contains an encylopaedic collection of recipes previously available, if at all, only in books long out of print. The introductions to each chapter describes the social as well as the culinary background of the dishes that follow, and are supported by an extensive critical bibliography and over 100 illustrations from contemporary sources. The author has provided oner 950 recipes, and much comment and explanation, covering the entire range of Georgian and Victorian kitchens. For many dishes she reproduces the original text of such writers as Mrs Glasse and Mr Rundell.
