Reader's note

It is not until someone asks what a casserole is that one realizes how we have come to accept this word as part of our everyday cookery language. The Oxford Dictionary defines a casserole as an ‘ovenware dish in which meat and other ingredients are cooked’. I feel that is an injustice. To me a casserole is many things: this word conjures up a picture of an attractive oval or round dish - the warm comforting brown of the casserole dish loved by the French, the brilliant blue and orange of the Scandinavian dishes and the essentially practically clear glass of the British variety. No matter the type you choose, all these casserole dishes are so good looking you'll be proud to use them in the oven and serve straight from them as the table. If you are going to buy a casserole dish and you will certainly need one if you are going to try out the dishes in this book. This book contains meat, fish and vegetable casseroles and desserts you can create in a casserole dish.
