Reader's note

Eggs have been used as food from the earliest times, and perhaps no other basic product enjoy such universal popularity or can boast such versatility. In addition to providing delicious and nourishing dishes, eggs play a vital part in cookery for leavening, binding, coating, thickening and garnishing. There are, indeed, few culinary preparations that do not include eggs. Dishes based on egg and cheese present many advantages to the busy man or woman. Many of them are quick and easy to make, while economically they must be one of the cheapest ways of introducing essential proteins into the family’s diet. Eggs are never out of season -- nor will this book be!
